At Colloca Estate Winery, we believe the best experiences are crafted from exceptional ingredients, thoughtfully paired. That's why we’re thrilled to introduce our Colloca Raw Bar, where the briny delicacy of East Coast oysters meets the crisp elegance of our award-winning white wines.

Join us for a tasting journey inspired by the Atlantic coast, featuring a curated selection of oysters sourced from some of the most revered Eastern Shore waters in North America—each paired to perfection with our estate-grown white wines.

🌊 Featured Oysters

1. Chesapeake Oysters – Maryland

These oysters are known for their large size and bold, savory flavor. Grown in the historic Chesapeake Bay, they deliver a balanced salinity with a slight minerality and earthy undertones. Their robust profile is a natural match for our Chardonnays. Whether you choose our Colloca Finger Lakes Chardonnay that we make from fruit sourced from the west side of Seneca Lake, or our Colloca Lake Effect Vineyard® Reserve Chardonnay made from our own estate fruit – the creamy texture and oak-kissed finish enhance the Chesapeake oyster’s depth without overpowering it.

2. Malpeque Oysters – Prince Edward Island

Renowned for their clean, crisp taste and light brininess, Malpeques offer a delightful combination of sweetness and bright ocean freshness. These elegant oysters find a harmonious partner in our Colloca Lake Effect Vineyard® Dry Riesling, with its vibrant acidity and notes of citrus and green apple, perfectly complementing the oyster’s delicate flavor.

3. Duxbury Bay Oysters – Massachusetts

Harvested from the cold, nutrient-rich waters of Duxbury Bay, these oysters are plump and buttery with a firm texture and a refined, slightly sweet finish. They’re ideally suited either of our white wines, but try our Colloca Casa Bianco (house white) made from Cayuga White and Frontenac Blanc components. The floral aromatics and balanced sweetness of the Casa Bianco play off the Cape Cod oyster’s subtle complexities and creamy mouthfeel.
